"Rainbow" chicken salad


I've decided to call this chicken salad "rainbow" because of the many vivid colours of the ingredients, which make the dish 'happy' and nice to see. :)
It is only seasoned with soy sauce, whose bitter taste creates a perfect contrast with the delicacy of the yoghurt sauce. :)
 


-Preparation time: 45 minutes


-Ingredients: (for 3 people)

600 gr of chicken breast
80 gr rocket
1 head of radicchio salad
150 gr of canned corn
50 gr of black stoned olives
4 spoons of soy sauce

For the yoghurt sauce:
250 ml of white yoghurt
1 and ½ spoon of extra virgin olive oil
Salt
Half lemon juice
Cinnamon


-Preparation:

Start by grilling the slices of chicken breast on both sides, salting just one side.



Then cut them in stripes and let them cool in a bowl.



In the meanwhile, wash and cut in stripes the radicchio and put it in the bowl. Add the rocket.


Cut the olives and put them in the bowl together with the drained corn.



Season with soy sauce.


Then, in a small bowl, mix the yoghurt with oil, lemon juice, a pinch of salt and some cinnamon.


Put some of the chicken salad onto a plate and serve it with some yoghurt suace.
(I suggest to pour some of the yoghurt sauce on the salad and mix it all together to refine the dish taste).
