Panzerotti with tuna

Today we will prepare a very tasty and original starter for your guests, but that  can also be your lunch if eat it alone, as a "sandwich". :) I've made this "panzerotti" (that hasn't got a translation in English) using the home made bread dough (infact I've use some of the bread dough left to make simple bread), but if you don't have bread dough you can simply use some flaky pastry, sold in supermarkets.
Of course, with home made bread they will be much more tasty and crunchy! ;)



-Preparation time: 1 hour ( 40 minutes preparation + 20 minutes cooking)

-Ingredients: (for 4 panzerotti)

350 gr of bread dough
½ onion
10 cherry tomatoes
10 black stoned olives
2 spoons full of capers
180 gr of tinned pickled tuna (already drained)
Pecorino cheese
Extra virgin olive oil
Salt


-Preparation:

On a floured pastry board divide the bread dough into 4 pieces.


Roll out each part of the dough with a rolling-pin.


Cut it making a rectangular.



Put each rectangular on some floured kitchen foil.


Then heat some oil in a pan.
Peel and cut the onion in small stripes and put them in the pan as soon as the oil is hot. Let them brown for a few minutes.



In the meanwhile, wash and cut the tomatoes into small pieces and add them to the onion. Salt a little bit.



Cut the olives in two and add them, with cappers, in the pan. Let it cook for a couple of minutes.



Remove the pan from the flame and add some grated pecorino cheese and the tuna in pieces.



Put it again on the flame and let everything cook for another minute.


When it’s ready, pour some of it on one half of each bread dough rectangular.


Close it, covering it with the other half.


Bake 30 minutes in the oven, 230°C.


Serve them hot.
