Spelt with squid rings and tomatoes

Let's prepare a colourful dish with barley and fish: colourful & delicious!












- Preparation time: 25 minutes

- Ingredients (for 2 people):
160 gr spelt
100 gr squid rings
100 gr cherry tomatoes
1/2 onion
Tomato sauce
Fresh basil
White wine
Extra virgin olive oil - Salt - Pepper

- Preparation:

Put some water with some salt in a pot. When the water boils, add the spelt, previously washed under fresh water. Let it cook for about 20 mins, stirring it every now and then.



In the meantime, cut the onion and put it in a pan with a bit of oil.



Wash and cut the squid rings in pieces.





Once the onion has browned, add the squids. Season with salt and pepper. Add half a glass of white wine and let it cook 1-2 minutes without lid to let the alcohol evaporate.



Wash and cut the tomatoes in 4 and as soon as the squids start to get softer, add the tomatoes and the tomatoe sauce. Season with salt and pepper.





When the spelt is almost ready but still a bit hard, drain it and add it to the pan. Mix everything and let it cook for another 2-3 minutes.





Serve with fresh basil.
