With today's recipe eating fish will be an explosions of flavours thanks to the match between squids, capers, olives & bell peppers! :)
- Preparation time: 1 hour
-Ingredients (for 2 people):
500 gr squids
2 potatoes
1/2 yellow bell pepper
1/2 red bell pepper
1/2 red bell pepper
1 clove of garlic
4-5 black olives (without stone)
2 teaspoons of capers
Parsley
Extra virgin olive oil – salt – pepper
- Preparation:
Cut the potatoes in half and boil them in salted water for 15-20 minutes
until they’re cooked.
In the meantime cut the garlic clove, the olives, the
capers and the parsley. Drain the potatoes and smash them with a fork. Add the
ingredients previously cut and mix everything with salt and pepper.
Wash the
squids and cut the tentacles off.
Stuff the squids with the potato stuffing and
use a toothpick to close them.
In a pan with some olive oil start cooking the bell peppers cut
in pieces with some salt and pepper.
After a few minutes add the tentacles.
Once the peppers are starting to get softer add the stuffed squids and let them
cook 10-15 minutes or until they’re cooked and soft.
Serve the squids on a base
of bell peppers.
