During these hot summer days, is there something better than a cold pasta to have lunch by staying light without giving up tasty dishes? ;)
-Preparation time: 20 minutes
-Ingredients (for 2 people):
160 gr Penne
pasta
8 cherry
tomatoes1 tin of corn
1 mozzarella
1 tin of natural tuna (56 gr drained)
Rocket
Extra virgin olive oil
Salt
Pepper
-Preparation:
Put some water in a pot with some salt and when it starts boiling add the
pasta.
In the meanwhile, wash and cut in half or in 4 the cherry tomatoes and
put them in a bowl.
Add the corn.
Cut the mozzarella into pieces and put it in
the bowl.
Drain the tuna and add it to the rest.
When the pasta is “al dente”,
that is to say, still a bit hard, drain it, wash it under cold water to cool it
and put it in the bowl.
Add the rocket.
Season with oil, salt and pepper.
Serve
it.
