Eggplants alla parmigiana

Here's another typical dish of the Italian tradition...melanzane alla parmigiana! :)
A complicated name for a really simple and delicious dish made by layers of eggplants, tomato sauce and cheese, for a real tasty meal! :D
Although according to the original recipe, the eggplants should be fried before putting them in layers into the oven, I decided to do I lighter version without frying them, but still having as a result a really delicious dish! :)
Extra tip: if you have fresh basil, put it in pieces in each layer... the final taste will be great!






-Preparation time: 2 hours (1/2 h of preparation + 1h 1/2 of baking)


-Ingredients (for a 15x22 cm baking tray):

3 eggplants/aubergines
5 sandwich cheese slices or 1 mozzarella
Tomato sauce
Extra virgin olive oil
Salt
Pepper


-Preparation:

Wash and cut the eggplants horizontally or in circled slices.


Put a bit of oil in the baking tray.


Start making a first layer of eggplants.


Then add some tomato sauce, salt and pepper.


Add some pieces of cheese.


Make another layer of eggplant and keep on  alternating the layers till you have finished all the ingredients. Cover the tin with a paper of silver foil.


Bake for 1hour 1/2, 190° C.
Serve hot.
