75 gr maize starch
60 gr almonds
80 gr sugar
90 gr butter
1 vanillin packet
1 egg-yolk
1 pinch of salt
80 gr dark chocolate
Take the butter out of the fridge and let it at room temperature for a while.
In the meantime put some water in a pot and when it starts boiling pour the almonds in it and let them there for 30-40 seconds.
Put them under cold water to cool them and then peel them.
Mix them till you get a flour.
Put the flour in a bowl with the sifted flour and maize starch, the sugar, the vainillin, the salt and mix everything. Then add the butter in pieces and the egg-yolk.
Knead till you get a soft dough. Envelope it in the clingfilm and let it rest 1 hour in the fridge.
Then, with a rolling pin, roll out the dough between two papers of floured kitchen foil, flouring a little bit the dough as well.
With a glass give the shape of the biscuits.
Put it in the oven, on a paper of kitchen foil, for 10-12 minutes, 180°C.
Then let them become cool and harder.
In the meantime melt some chocolate in a small pot with a bit of water and cover half of each biscuit with the chocolate glaze.
Let the glaze cool and then serve the biscuits.
