Penne pasta with mushrooms

Here's a delicious fist course with a typical autumn ingredient: mushrooms! :)
Mixed with tomatoes and Parmesan cheese, they will give a special taste to your pasta! :)
 


-Preparation time: 40 minutes


-Ingredients: (for 2 people)

180 gr pasta (penne)
30 gr of dried mixed mushrooms
7-8 cherry tomatoes
½ onion
Grated Parmesan cheese
Fresh parsley
Salt
Pepper
Extra virgin olive oil



-Preparation:

Start by leaving the dried mushrooms in a bowl with lukewarm water, for at least 1 hour.


Wash and cut the onion in stripes and put it in a pan with a bit of oil.


Then put water and kitchen salt in a pot and wait till the water starts boiling.
In the meanwhile wash the parsley and break it into bits.



Squeeze the mushrooms and cut them into pieces. When the onion starts browning, add the mushrooms and the parsely. Salt and pepper.



When the water starts boiling, put  the pasta in it. In this way, when the pasta is ready the mushrooms will have cooked enough.

Then grate some Parmesan cheese and put it in a plate.
Wash and cut the tomatoes in 4. Pour them in the pan and salt a bit.


When the pasta still has to cook 1-2 minutes, drain it and put it in the pan with the grated cheese.

Mix everything on a low flame so that the pasta will both finish cooking and get tasty.


Serve it hot.
