Peperonata

Here's a tasty side dish, also quite quick to prepare: what in Italian we call "peperonata"! :)  It's a mix of peppers with a bit of peeld tomatoes and vinegar, to get a light sharp flavour... and if you use peppers of different colours, it will also be nice to see! ;)



-Preparation time: 30 minutes + cooling

-Ingredients: (for 3 people)

3 peppers (yellow, red and green)
1/2 onion
Peeled tomatoes or puréed tomatoes
Extra virgin olive oil
Vinegar
Salt
Fresh basil


-Preparation:

Cut the onion in small slices and put them in a pot with a bit of oil.


Wash and cut the peppers in medium-sized pieces.



When the onion starts browning, add the peppers and salt them.


Cook for a few minutes, then add a little bit of vinegar.
After a few more minutes, pour the peeled tomatoes in the pot, salt and mix everything.



The peppers will have to cook 15-20 minutes.
A few minutes before the end of the cooking, add the basil previously washed and broken up into small pieces.



After a couple of minutes, pour the peperonata in a bowl and let it become lukewarm before serving.
