Gnocchetti sardi with sausage and saffron

For today's recipe I've used a type of pasta which is not used very ofte, but that's really delicious: the so called "gnocchetti sardi"! :)
The strong taste of the sausage creates a perfect mix with the unique taste of the saffron and of the Pecorino cheese...an ideal dish for these dull and rainy autumn days! ;)

  -Preparation time: 25 minutes


-Ingredients: (for 3 people)

250 gr pasta (gnocchetti sardi)
150 gr sausage
1/2 onion
12 cherry tomatoes
1 packet of saffron
Pecorino cheese
Tomatoe purée
Salt
Pepper
Extra virgin olive oil


-Preparation:

Put some water in a pot with some kitchen salt and when the water starts boiling pour the pasta in it. Mix every now and then.

In the meanwhile break into bits the onion and put it in a pan with a bit of oil.


When it’s starting to brown, add the pieces of sausage and cook for a couple of minutes.


Then add the puréed tomatoes, salt, pepper and mix everything.



Wash and cut the tomatoes in 4 parts and leave them there.
2 minutes before the pasta is ready, drain it and put it in the pan with the sauce.


Add the saffron.


Add the tomatoes and the grated pecorino cheese. Salt and pepper and let it cook for 2 minutes, to make sure the pasta is ready and has become tasty.


Pour it into plates and serve.
