Spelt with vegetables


Today I suggest a first course with a cereal not often used: spelt :)
Mixed with vegetables, it will create a great dish: tasty, healthy and unsual...also ideal as a packed lunch! :)
 


-Preparation time: 40 minutes + cooling


-Ingredients: (for 2 people)

160 gr spelt
1/2 onion
1 yellow pepper
1 courgette
1 carrot
Cherry tomatoes
Pureéd tomatoes
Salt
Pepper
Extra virgin olive oil


-Preparation:

Put some water with a bit of kitchen salt in a pot. Wash the spelt and when the water starts boiling, pour the spelt in it. Mix it every now and then.





Heat some oil in a pan. Peel and dice the onion in small pieces and as soon as the oil is hot, put it in the pan. Cook everything covering it with a lid.

 


Peel and cut the carrot in slices and each slice in 4 parts. Add it to the onion, salt and pepper.





Wash and dice the pepper, put it in the pan, salt and pepper.





Wash and cut each slice of the courgette in 4 parts. Add it to the rest of the vegetables and salt.





Cook for 4 minutes, then add some pureéd tomatoes, just to amalgamate the ingredients, avoiding that the taste of the sauce overwhelms the one of the vegetables. Mix everything.





Cut the cherry tomatoes in 4 parts and put them in the pan. Salt and pepper.





After 2 minutes put off the fire. At this point the spelt has cooked for 20-25 minutes and should be ready.
Drain it, put it under cold water to stop the cooking and then put it in a bowl.





Add the vegetables.





Wait until everthing has become cold or at least lukewarm, before serving.

TIP: It can also be a perfect packed lunch!
