Vegetable lasagne

What about doing a tipical dish, lasagne, but in a different way?  :)

This is what I suggest... vegetable lasagne!
Instead of putting meat inside it we will use vegetables such as courgettes, aubergines, onions and peppers...to taste a classic recipe, but in an innovative version. ;)
Moreover, instead of using the Béchamel sauce, I've used Robiola cheese, a very soft and fresh kind of cheese. Once it has melted and has become more tasty thanks to the Parmesan cheese, you will get a wonderful cream that will match perfectly with vegetables! :)


-Preparation time: 1 hour and ¼ (45 minutes of preparation + 30 minutes of cooking)


-Ingredients: (for 4 people)

1 aubergine
1 red pepper
½ yellow pepper
1 onion
2 courgettes
1 mozzarella
400 gr of Robiola cheese
1 packet of lasagne sheets
Milk
Extra virgin olive oil
Kitchen salt
Pepper
Parmesan cheese


-Preparation:

Cut the onion in small pieces and put them in a pan with a bit of warm oil.



Cut the pepper in pieces and put them in the pan. Salt and pepper.



Cut the aubergine and add it. Salt and pepper.



Finally cut the courgettes in pieces and put them in the pan.
Salt, pepper and let it cook until the vegetables are ready. (they don’t have to be too cooked because they’re going to bake in the oven for another half an hour).



In the meanwhile put the Robiola cheese into a bowl and melt it by mixing it with a bit of milk.




Add some kitchen salt and some grated Parmesan cheese and mix till you get a cream.



Cut the mozzarella into pieces.

 

In the end build the lasagne’s layers:
1- Spread a bit of cream in a baking tin


2- Lay the first 2 lasagne sheets 


3- Cover with cream
To make sure the edges don’t get too dry, it is better to cover them entirely with the cream, or to wet them with a bit of milk.


4- Put some vegetables


5- Add some grated Parmesan cheese


6- Add some pieces of mozzarella


Repeat each step till the ingredients are finished, obtaining 2 layers of each ingredient.


Bake it in the oven, 180° C, 30 minutes.
